The restaurants are not really a viable option for a Meet Up or meeting. They will of course work fine for an informal meal with a few others. But you will run into the following limitations.
You cannot pull tables together. In the buffet their staff may be able to pull a few tables together.
All of the dinner restaurants require a reservation and cannot be made until after you arrive.
Maximum reservation group size for dinner at a restaurant is 10 people.
